Kate’s Quick Bites: Ginger Cookies

This recipe comes from Kate’s mom. Kate says “These ginger cookies were a staple in my house growing up. Baking a batch of these simple, delicious cookies will have your home smelling like all the warm spices of the holidays in no time.“

Ingredients:

  • 3/4 cup unsalted butter, softened (1.5 sticks)
  • 1 cup granulated sugar
  • 1 egg
  • 1/4 cup molasses
  • 2 cups all purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon ground ginger
  • Turbinado sugar for rolling

Instructions:
Cream butter and sugar. Add egg, then molasses; beat well.

Whisk dry ingredients together. Add to creamed mixture, beating until smooth.

Refrigerate dough for two hours.

Roll dough into small balls. Coat each ball in turbinado sugar. Place balls 2 inches apart on silpat or parchment-lined baking sheet. Bake for 11-12 minutes at 350 degrees. Cool briefly on pan before transferring to a rack to cool completely.
