Roughly 70,000 pizzerias are operating in the United States right now. One in four of those pizzerias is a Domino’s, Pizza Hut, or Papa John’s.
The chains own 58% of the pizza market, but independent, locally owned pizzerias are closing the gap.
Pizza Magazine reports that discerning diners – especially younger customers – crave fresh, quality ingredients like Italian flour or local produce.
