Kate's Quick Bites: Cowboy Caviar
We head back into the kitchen to make Cowbow Caviar with Brayton Bollenbacher of the Columbus Gay Men’s Chorus for another installment of Kate’s Quick Bites.
This time we learn about a performing arts organization who can describe themselves in four words. Voices Raised. Lives Changed.
Ingredients:
- 2-3 bell peppers of any color
- 1 red onion
- 6 oz feta cheese
- 3 mangos
- Cilantro
- 15 oz black beans
- 15 oz. chickpeas
- 2 c. corn
- 2 c. pineapple
- 1 jalapeno
- Candied jalapeno
- 12 oz can black olives (optional)
- Corn chips for dipping
Dressing
- 3 limes
- 1/4 c. olive oil
- 1/4 c. white wine vinegar
- 2-4 Tablespoon spicy honey
- 1-2 Tablespoon taco seasoning
- Sugar
- Salt and pepper
Instructions:
In a small bowl, combine the lime juice, olive oil, vinegar, spicey honey, taco seasoning, sugar, salt and pepper. Set aside.
Small dice the peppers, onion, mango and pineapple. Chop cilantro, jalapeno and and jalapeno. Place in a large bowl.
Drain and rinse the beans, corn and chickpeas and add to the bowl. Drain the pineapple and black olives and add to the large bowl. Pour in the dressing and mix well.
Serve with corn chips.
