Kate's Quick Bites: Couscous with Raisins
We head back into the kitchen for another installment of Kate’s Quick Bites to cook up couscous with raisins with CATCO’s Christy Farnbaugh, a family favorite.
While we cook, we learn more about the local theatre company that strives to make a more empathetic and equitable world.
Ingredients:
- 32 oz chicken broth
- 1 1/2tsp salt
- 1 1/2 cup plain couscous
- 1 ½ cup golden raisins
- 1 1/2 cup pinenuts
- 7 green onion, chopped
- 1/2 cup melted butter
Instructions:
Bring broth and salt to a boil in a heavy pot. Turn off heat. Immediately mix in couscous and raisins. Let stand until couscous is tender and broth is aborbed, about 15 minutes.
Fluff couscous with a fork. Stir in nuts, green onions and butter. Season to taste with pepper and serve.
