Kate's Quick Bites: Blueberry Crisp
We head back into the kitchen to make a tasty Blueberry Crumble. In this segment of Kate’s Quick Bites we learn about Wild Goose Creative, a Columbus organization that’s all about helping build a community of people who care about creativity.
Sarah Barr, Executive Director of Wild Goose Creative joined Kate in the kitchen to cook up this delicious quick bite. She said you can make it with almost any fruit or even a mix of fruits. Apples or pears are a good substitute.
Ingredients
- 4 cup blueberries
- Crisp Topping
- 1 c old-fashion oats
- 1/2 c pecans
- 1/2 c almond meal
- 1/4 c maple syrup
- 1/4 c olive oil
Instructions:
Mix together topping ingredients
Pour fruit/berries into an 8×8 pan, then layer topping over it.
Bake at 350 degrees 35-40 minutes, until fruit is bubbling and topping is golden brown
Sarah says this is good for breakfast with spoonfuls of Greek yogurt… and it’s also great warm right out of the oven for an after-dinner with a scoop of vanilla ice cream. Use sweet & spicy pecans for more flavor.
